I'm adding my vote to Valencia's Mercado Central. Not only is it freakin' massive, a gorgeous modern building, and a ham-lover's paradise (seriously, there are millions), but it really shows us Brits up as the staid cooks we are. Row upon row of sheep's heads, sweetbreads, beef 'fries' and other offal; vast tanks of live eels, heaps of twitching lobsters, huge swathes of squid – it's a culinary revelation. We spent two hours just looking around and gawping.
