WHY THIS WEEK? The restaurant at Hôtel Thoumieux’s new makeover hails the arrival of chef with a rep Sylvestre Wahid. Previously trained in France and New York, Wahid honed his expertise in highly successful kitchens, including a nine-year stint at Michelin-star-holding Baumanière (a Smith favourite). At Restaurant Sylvestre his team crafts pretty plates with flavourful organic ingredients.

OUR FAVOURITE BITS Get an exclusive view of kitchen by dining at the marble-topped counter by the chef’s station. The rainbow of salts at each table – blue Persian, pink Himalayan sea salt, and black salt from Hawaii – show the team’s dedication to detail. 

WHAT YOU SAY… ‘I loved absolutely everything about Hôtel Thoumieux. It’s chic but not at all snooty. The place is beautifully designed, and the rooms are gorgeous and smell amazing thanks to their lovely scented candles. I was in Paris to run in a half marathon so it was important to me that the room was comfortable and quiet, and I wasn’t disappointed. The Aesop toiletries in the bathrooms were a big plus as well! MR & MRS SMITH SAY… ‘If India Mahdavi provides the style, the two restaurants provide the substance. You’d be forgiven for forgetting this is even a hotel for a moment, given the quality of food the kitchen turns out. First off, there’s the low-key brasserie, all dark and moody reds and greens, mirrored walls and gleaming brass; manned by a clutch of handsome waiters.
